"Watch this two hour long video" is not a particularly useful reply. If you think the TV can exfiltrate your data without an internet connection then you should be able to explain how it could do that in your own words.
Just because you didn't allow it on your local WiFi doesn't mean it did not connect to the Internet. Your neighbors might have a guest WiFi it can use. Or maybe it has a built-in cell modem. Your data is valuable, there's reason to put effort into getting it.
Xfinity (aka Comcast) routers broadcast a separate network for Comcast subscribers do use from their phone. I don't think it's unreasonable to think that Comcast and TV manufacturer's could have an agreement that would allow TVs to connect.
They can just start a capture, record to RAM / storage, and retrieve it later when it is reconnected to the network.
Otherwise if it's disconnected, it is still hard to exfiltrate the data somewhere.
Maybe they could get creative via Bluetooth, but then you would need a cooperating device in proximity of the device.

A lot of guitar quality signals will not show through easily in the sound. Like how easy or difficult it is to fret the strings, how well it stays in tune in a controlled environment over time, fit and finish work, etc. That kind of stuff makes the difference between a guitar that can be played, and a guitar which is fun to play.
Almost all of the variation between sufficiently similar electric guitars, barring the quality of the pickups and maybe some of the electronics, can be eliminated in the setup.
And a lot of the expensive luxury stuff people are convinced has an impact on the sound has approximately zero impact on the sound.
sound doesn't really tell you about quality issues, quality issue are more does it have any fret ends that cut into your fingers as you move up and down the neck, are any of the frets too high and causing buzzing, does it maintain its pitch or do you frequently need to re-tune it, is it well setup from the factory, are the strings too high, things like that.
Making two guitars sound similar, especially if the goal was that these guitars should sound similar, isn't all that hard. But also just because they're both the same style of guitar, doesn't mean the goal was for them to sound the same. Even just looking at Fender's line up, different strats have different pickups which are designed to sound different

The look and feel of these instruments it incredibly important for artistic performance, and we're hoping to find off-the-shelf options for various buttons/switches rather than fabricating our own.

For patents on physical things/devices, he's giving very good advice. You need to file within the 1st year you've used the item in commerce.
The internet is littered with great products that weren't patented, then copied (sometimes by their overseas contract manufacturer itself just running a 2nd shift on the production line).
If you don't have global patent protection, you find yourself competing with your own product sold cheaper by someone else and no way to fight it. Super common problem for popular products.
